Stock rotation in food is the process of organising all your food items so that those with the earliest expiration dates are used first, no matter when they arrived. It helps reduce waste and keep food fresh — just like checking which yoghurt in your fridge expires first before opening a new one. It’s the same principle in a commercial kitchen, and it’s often referred to as the First Expired, First Out (FEFO) method.
Stock rotation is essential for a smooth-running kitchen. It limits food waste and makes sure use by labels (sometimes known as best before labels) are adhered to, as well as helping you to meet food safety label standards, stay in control of costs, and keep quality high. It’s also just a way to keep your kitchen in order – because no chef wants a disorganised cooking area!

FEFO refers to the First Expired, First Out. This stock rotation method prioritises using products with the closest expiration dates, regardless of when they arrived, to ensure items are used in the correct order and minimises waste by following their expiry date labels.

FIFO refers to the First In, First Out method of stock rotation. Older items are placed at the front of the fridge or pantry, making sure they’re used up before new ones, in line with their expiry date labels.

Our labels can include details like date of entry, expiry date, product name and barcodes, allowing you to easily implement either FEFO or FIFO in your kitchen — whichever best suits your business and workflow.

HACCP stands for Hazard Analysis and Critical Control Point. It’s a preventative approach to food safety and involves spotting potential hazards in the food production process, before implementing measures to control these hazards. Clear and effective food date labels are key to meeting HACCP standards.
Yes. In the UK, HACCP is mandatory for all food businesses, and each must have a food safety management system in place based on HACCP principles.
